Recipe 1: Sheet Pan Chicken Fajitas

Let’s start with chicken fajitas. With a handful of ingredients, you can have a meal that feels fresh and flavorful.

Ingredients:

2 boneless, skinless chicken breasts (or thighs if you prefer darker meat)

1 red bell pepper

1 yellow onion

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Tortillas and your favorite toppings (like sour cream, salsa, and guacamole)

Instructions:

1.Preheat your oven to 400°F (200°C).

2.Slice the chicken, bell peppers, and onion into strips.

3.Toss the chicken and veggies in olive oil, chili powder, garlic powder, cumin, salt, and pepper.

4.Spread everything out evenly on a baking sheet and pop it into the oven for 20-25 minutes or until the chicken is cooked through.

5.Serve the fajitas on warm tortillas with your favorite toppings.

It’s fast, fresh, and absolutely packed with flavor. The best part? You only need one pan, and the cleanup is a breeze!

2. Speedy Stir-Fries: Stir It, Sauté It, Serve It

1 tablespoon sesame oil

1 cup broccoli florets

Cooked rice or noodles for serving

Instructions:

1.Heat sesame oil in a large pan or wok over medium-high heat.

2.Add tofu cubes and cook until golden on all sides, about 5-7 minutes. Remove and set aside.

Ingredients:

8 ounces spaghetti or fettuccine

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley for garnish (optional)

2.While the pasta cooks, melt butter in a separate pan over medium heat. Add the garlic and sauté for about 1 minute.

3.Pour in the heavy cream and bring to a simmer. Let it cook for 2-3 minutes until it thickens slightly.
